Vanilla Coconut Shake

This morning my mommy made a smoothie for me out of my new cookbook, Ani's Raw Food Kitchen.

This is the vanilla coconut shake on page 50.

She halved the recipe for me, since it says it makes 4 servings, and I wasn't sure if I would like it or not.

The verdict? I liked the flavor of it that the pecans added, but the texture was a tad gritty. Possibly because we don't have a super powerful blender? I'm not sure. I think if I was able to chew then it would've been okay, but since I can't, it was a little hard to get it down just by swallowing.

It definitely needed the extra ice that we added to it. The mixture wasn't very thick, so next time we might also add a frozen banana to help it out.

P.S. See my green blankie? Smoothies always make me cold! Even though it's summer, we've been having an awful lot of cold foggy mornings lately.

What to Eat When You Can't Chew

I didn't realize how long it had been since I downloaded the pics on my camera to my computer! When I did that today, I found pics way back from when I had my wisdom tooth taken out. Yikes. That was a couple weeks ago! If I don't start posting my pics more frequently, I'm never going to catch up here. *Gulp*

I guess I'll start with the oldest. Here's some of what I ate when I couldn't chew:

Sweet potato soup


Plain soy yogurt. I LOVE this stuff - but only the plain flavor. It's DELISH. :-)


Another absolute fave: quinoa flakes with brown sugar sprinkled on top. I could eat this any time of day. Quinoa is a complete protein, so it's good for you! The flakes are similar to instant oatmeal, only better, in my opinion. :-) So smooth, so easy to chew - that's important when you have your wisdom teeth taken out.

Catch Up Pics

On Tuesday this week I had to have one of my wisdom teeth removed rather unexpectedly. Owww. That means I'm still in recovery mode, so I have a lot of catch up posting to do.

Lately I've been surviving on dairy free Jamba Juice smoothies (Mega Mango and Pomegranate Paradise), plain soy yogurt, vanilla soy ice cream, mashed banana, and butternut squash soup. I can barely open my mouth wide enough to fit in my medicine.

This afternoon I made the banana cocoa smoothie recipe in this month's issue of Vegetarian Times that my sweet mom got for me. It was good!

Here are a few pics that I was going to post before this whole incident occurred:

Breakfast on Sunday morning (I think this was from Sunday): banana oatmeal with a little cashew butter. I didn't really like the banana cooked into the oatmeal, but I ate it anyway. Next time I'd rather have it sliced on top.

Lunch on Sunday after church and Sunday school - a quesadilla made with soy cheese, salsa for dipping, and apples on the side.

In between services I had a corn muffin to tide me over. At our church they used to have doughnuts in between the first and second hour, but they don't anymore. Know why? Because some of the parents who had kids on healthy diets complained that it was too hard to say "no" to their kids when other kids DID get to have doughnuts. Um, hello? Be a parent and say no anyway.

Not that I could eat doughnuts, but they cut out food between services altogether. So I bring my own now. And everyone else can just watch me eat and listen to their own stomachs growl. So there.
